his Rosé Traditional Method Sparkling Wine is born from the clay and limestone soils of Apulia, where sunshine and the proximity of the sea give the grapes intensity and balance.
Harvest
The grapes are hand-harvested and carefully selected.
Vinification and Ageing
Following gentle pressing using only the free-run juice and an initial fermentation in stainless steel tanks, the wine continues its evolution in bottle according to the Traditional Method. Ageing on the lees for a minimum of 24 months at an average temperature of 13°C slowly guides the wine’s maturation. Resting in the silence of the cellar, protected from light and disturbance, time patiently shapes its elegance and depth.
Vintage Notes
The 2022 vintage, marked by warm and dry weather conditions, resulted in a slightly earlier harvest, yielding healthy, concentrated grapes capable of expressing both aromatic intensity and freshness. The result is a refined and elegant sparkling rosé, characterised by fragrant aromas and a distinctive savoury character.
Tasting Notes
Fine and elegant perlage, with delicate peach-blossom reflections. The bouquet reveals aromas of citrus fruits, pomegranate and wild strawberry, complemented by floral hints and delicate notes of freshly baked bread crust. On the palate, it is fresh, savoury and vibrant, supported by remarkable balance and leading to a lingering finish with subtle saline and almond nuances.
Food Pairing
Exceptionally versatile at the table, it pairs naturally with Mediterranean cuisine. Ideal with raw seafood, shellfish and tuna tartare, thanks to its freshness and savoury profile. It also complements fresh cheeses and seafood risottos, enhancing their flavours with balance and elegance without ever overpowering them.
